Guidelines for the sanitary-epidemiological assessment of the safety and functional potential of probiotic microorganisms used for food production

Guidelines set requirements for microbiological, biochemical, molecular genetic and hygienic assessment of strains used as starter cultures for the manufacture of probiotic starters, including direct application, bacterial concentrates and microbial biomass for the production of probiotic food products and dietary supplements, and necessary laboratory research methods for its implementation. The guidelines are intended for legal entities and individual entrepreneurs whose activities are related to the development, production and circulation of biotechnological products, as well as for testing laboratory centers that monitor the quality and safety of food raw materials and food products and dietary supplements and are accredited in the prescribed manner for a given Kind of activity.

Методические указания устанавливают требования к микробиологической, биохимической, молекулярно-генетической и гигиенической оценке штаммов, используемых в качестве стартовых культур для изготовления пробиотических заквасок, включая закваски прямого внесения, бактериальных концентратов и микробной биомассы для производства пробиотических пищевых продуктов и биологически активных добавок к пище, и необходимые методы лабораторных исследований для ее осуществления. Методические указания предназначены для юридических лиц и индивидуальных предпринимателей, деятельность которых связана с разработкой, производством и обращением биотехнологической продукции, а также для испытательных лабораторных центров, осуществляющих контроль качества и безопасности продовольственного сырья и пищевых продуктов и БАД к пище и аккредитованных в установленном порядке на данный вид деятельности.
