These guidelines provide a method for the mineralization of food samples and food raw materials using analytical autoclaves for the subsequent determination of the content of toxic elements (copper, zinc, lead, cadmium, arsenic, mercury, tin, nickel, iron, chromium, selenium, cobalt) using atomic spectrometry methods (atomic absorption spectrometry with atomization in a flame, in a graphite furnace and using the hydride generation technique, atomic emission spectrometry with inductively coupled plasma) and inversion-voltammetric method and are designed for laboratory research of food safety institutions of the state sanitary and epidemiological service of Russia.

Настоящие методические указания устанавливают способ минерализации проб пищевых продуктов и продовольственного сырья с использованием аналитических автоклавов для последующего определения содержания токсичных элементов (меди, цинка, свинца, кадмия, мышьяка, ртути, олова, никеля, железа, хрома, селена, кобальта) методами атомной спектрометрии (атомно-абсорбционной спектрометрией с атомизацией в пламени, в графитовой печи и с использованием техники генерации гидридов, атомно-эмиссионной спектрометрией с индуктивно-связанной плазмой) и инверсионно-вольтамперометрическим методом и предназначены для проведения лабораторных исследований безопасности пищевой продукции учреждениями госсанэпидслужбы России.
