This standard establishes a method for detecting linear condensed phosphates (phosphoric acid salts having a linear structure of phosphate anions) in meat and meat products by separation by thin-layer chromatography. Since polyphosphates are gradually hydrolyzed by enzymes contained in meat or meat products, as well as during heat treatment, this standard applies only to the detection of introduced polyphosphates
Настоящий стандарт устанавливает метод выявления линейных конденсированных фосфатов (солей фосфорной кислоты, имеющих линейное строение фосфат-анионов) в мясе и мясных продуктах посредством разделения тонкослойной хроматографией. Поскольку полифосфаты постепенно гидролизуются ферментами, содержащимися в мясе или мясном продукте, а также при тепловой обработке, настоящий стандарт применяется только для обнаружения вносимых полифосфатов
