Vegetable oils. Determination of quality and safety indices by near infrared spectrometry method

This standard applies to vegetable oils and establishes a method of spectroscopy in the near infrared region for the simultaneous rapid determination of the following quality and safety indicators: - acid number; - peroxide value; - anisidine number; - mass fraction of phosphorus-containing substances; - mass fraction of erucic acid (for cruciferous vegetable oils); - mass fraction of trans fatty acid isomers. The method also extends to the definition of: - color, mass fractions of moisture and volatile substances and non-fatty impurities; - iodine number, using as a reference method for calibrating an instrument of any of the methods according to GOST 5475
Настоящий стандарт распространяется на растительные масла и устанавливает метод спектроскопии в ближней инфракрасной области для одновременного экспресс-определения следующих показателей качества и безопасности: - кислотного числа; - перекисного числа; - анизидинового числа; - массовой доли фосфорсодержащих веществ; - массовой доли эруковой кислоты (для растительных масел из семян крестоцветных); - массовой доли трансизомеров жирных кислот. Метод также распространяется на определение: - цветности, массовых долей влаги и летучих веществ и нежировых примесей; - йодного числа, с использованием в качестве референтного метода для калибровки прибора любого из методов по ГОСТ 5475
