This standard applies to high-quality baking wheat and rye flour and establishes a method for determining its whiteness. The essence of the method consists in measuring the reflectivity of the compacted smoothed surface of flour using a photovoltaic device. The whiteness index is characterized by the zonal reflection coefficient in arbitrary units of the device at the filter СZS-9.
Настоящий стандарт распространяется на сортовую хлебопекарную пшеничную и ржаную муку и устанавливает метод определения ее белизны. Сущность метода заключается в измерении отражательной способности уплотненно-сглаженной поверхности муки с применением фотоэлектрического прибора. Показатель белизны характеризуется зональным коэффициентом отражения в условных единицах прибора при светофильтре ЖЗС-9
