Meat and meat products. Method of histological identification of composition

The standard applies to the following types of meat and meat products: - meat of all types of slaughter animals and poultry; - meat mechanical additions, including poultry; - semi-finished meat products (natural, chopped, minced meat, dumplings), including using poultry meat; - pork products; - sausages, including the use of poultry meat; - meat and meat-and-vegetable canned foods, including those using poultry meat. The method is intended to assess the quality of raw meat and meat products and their compliance with the regulatory document. The method is based on the identification of animal and vegetable components in histological preparations in various types of canned meat and meat products in accordance with their microstructural features, as well as establishing the ratio of muscle and connective tissue in raw meat.
Стандарт распространяется на следующие виды мяса и мясопродуктов: - мясо всех видов убойных животных и птиц; - мясо механической дообвалки, в том числе мясо птицы; - мясные полуфабрикаты (натуральные, рубленые, фарш, пельмени), в том числе с использованием мяса птицы; - продукты из свинины; - колбасные изделия, в том числе с использованием мяса птицы; - мясные и мясорастительные консервы, в том числе с использованием мяса птицы. Метод предназначен для оценки качества мясного сырья и мясопродуктов и их соответствия нормативному документу. Метод основан на идентификации на гистологических препаратах животных и растительных компонентов в различных видах мясных консервов и мясопродуктов в соответствии с их микроструктурными особенностями, а также установлении соотношения мышечной и соединительной тканей в мясном сырье.
