This standard applies to mayonnaise and mayonnaise sauces, which are emulsion products made from edible vegetable oils and water, with the addition of emulsifying and flavoring ingredients, acidulants and other food additives. Mayonnaise and mayonnaise sauces are intended for direct consumption as a seasoning for salads and various dishes, for use in cooking and catering.
