The standard applies to canned food: fruit and vegetable juices, nectars, fruit drinks and juice drinks; fruit and vegetable concentrated juices, as well as raw materials, drinking initial, technological, technological washing water, equipment and air of industrial premises and establishes methods for their microbiological analysis using special microbiological media: - quantitative method for determining mesophilic aerobic and optional anaerobic microorganisms (CMAFAN); - A qualitative method for the detection of coliform bacteria (coliform bacteria) in drinking source, technological and technological washing water; - quantitative and qualitative methods for the determination of yeast, mold fungi, lactic acid and acetic acid bacteria; - a qualitative method of confirming the absence of microorganisms in the finished products causing their spoilage (yeast, mold fungi, lactic acid and acetic acid bacteria); - qualitative method of confirming the absence in the finished products of the indicator, pathogenic and conditionally pathogenic limited microflora, including B. subtilis, B. cereus, B. polymyxa, S. aureus, mesophilic clostridia (including group C. botulinum, C. Perfringens), sulfite-reducing clodridine, salmonella. The methods are intended for determining the quantity or qualitative detection of microorganisms: - direct seeding into special microbiological media of a certain volume (mass) of the sample or its dilution; - using membrane filtration.
Стандарт распространяется на консервы: фруктовые и овощные соки, нектары, морсы и сокосодержащие напитки; фруктовые и овощные концентрированные соки, а также сырье, питьевую исходную, технологическую, технологическую промывную воду, оборудование и воздух производственных помещений и устанавливает методы их микробиологического анализа с применением специальных микробиологических сред: - количественный метод определения мезофильных аэробных и факультативно анаэробных микроорганизмов (КМАФАнМ); - качественный метод выявления бактерий группы кишечных палочек (колиформных бактерий) в питьевой исходной, технологической и технологической промывной воде; - количественный и качественный методы определения дрожжей, плесневых грибов, молочнокислых и уксуснокислых бактерий; - качественный метод подтверждения отсутствия в готовых продуктах микроорганизмов, вызывающих их порчу (дрожжей, плесневых грибов, молочнокислых и уксуснокислых бактерий); - качественный метод подтверждения отсутствия в готовых продуктах индикаторной, патогенной и условно-патогенной лимитируемой микрофлоры, в том числе В. subtilis, В. cereus, В. polymyxa, S. aureus, мезофильных клостридий (в том числе группы С. botulinum, С. Perfringens), сульфитредуцирующих клос-тридий, сальмонелл. Методы предназначены для определения количества или качественного выявления микроорганизмов: - прямым посевом в специальные микробиологические среды определенного объема (массы) анализируемой пробы или ее разведения; - с применением мембранной фильтрации.
