Grain. Methods of determination quantity and quality of gluten in wheat

This standard applies to grain of soft and durum wheat, produced according to GOST R 52554 and establishes a method for determining the amount of gluten, which involves washing it manually or using mechanized means of dough (mixed from ground grain and drinking water) and the method of determining gluten quality, which involves its elastic properties
Настоящий стандарт распространяется на зерно мягкой и твердой пшеницы, производимое по ГОСТ Р 52554 и устанавливает метод определения количества клейковины, предусматривающий отмывание ее вручную или при помощи механизированных средств из теста (замешенного из размолотого зерна и питьевой воды) и метод определения качества клейковины, предусматривающий измерение ее упругоэластичных свойств
