This standard applies to mayonnaise and mayonnaise sauces and sets the acceptance rules and test methods for organoleptic and physico-chemical parameters: - determination of the consistency, appearance, color, smell and taste; - determination of the mass fraction of moisture; - determination of the mass fraction of fat; - determination of the mass fraction of egg products in terms of dry yolk; - determination of acidity; - determination of the resistance of the emulsion; - determination of the peroxide value of the fatty phase isolated from the product; - determination of mass fractions of preservatives; - determination of the mass fraction of protein substances; - determination of effective viscosity; - determination of pH
