Food products. Methods for detection and quantity determination of coliformes

This standard applies to food products other than milk and dairy products, and establishes a method for identifying coliform bacteria in a specific food sample and three methods for determining their quantity: the most probable number method (NPV) and the methods of sowing in or on agar selective diagnostic media. The method for determining the NPV of coliform bacteria is intended for food products containing less than 150 or 1 cubic cm of solid product per g of solid. liquid product less than 15 cells of coliform bacteria. The method for determining the number of coliform bacteria by planting in aerated selective diagnostic media is intended for food products containing in 1 g of solid product more than 150 or 1 cm 3. liquid product more than 15 colony forming units (CFU) of coliform bacteria. The method of determining the number of coliform bacteria by sowing on agarized selective diagnostic media is intended for food products containing 1 g of solid product more than 1500 or 1 cm 3. liquid product more than 150 CFU of coliform bacteria. It is allowed to use chromogenic media for preliminary detection of the number of bacteria of the group of intestinal sticks (coliform bacteria) in oil and fat products.
Настоящий стандарт распространяется на пищевые продукты, кроме молока и молочных продуктов, и устанавливает метод выявления в определенной навеске пищевого продукта колиформных бактерий и три метода определения их количества: метод наиболее вероятного числа (НВЧ) и методы посева в или на агаризованные селективно-диагностические среды. Метод определения НВЧ колиформных бактерий предназначен для пищевых продуктов, содержащих в 1 г твердого продукта менее 150 или в 1 см. куб. жидкого продукта менее 15 клеток колиформных бактерий. Метод определения количества колиформных бактерий посевом в агазированные селективно-диагностические среды предназначен для пищевых продуктов, содержащих в 1 г твердого продукта более 150 или в 1 см куб. жидкого продукта более 15 колониеобразующих единиц (КОЕ) колиформных бактерий. Метод определения количества колиформных бактерий посевом на агаризованные селективно-диагностические среды предназначен для пищевых продуктов, содержащих в 1 г твердого продукта более 1500 или в 1 см куб. жидкого продукта более 150 КОЕ колиформных бактерий. Допускается использование хромогенных сред для предварительного выявления количества бактерий группы кишечных палочек (колиформных бактерий) в масложировой продукции
