This standard applies to meat (all types of slaughter animals), semi-finished products, by-products, sausages and meat products and establishes general requirements and methods for microbiological analysis. Identification and identification of microorganisms: - the number of mesophilic aerobic and facultative anaerobic microorganisms (CMAFAnM); - bacteria of the group of intestinal sticks (coliforms bacteria - BGKP); - bacteria of the genus Proteus; - bacteria of the genus Pseudomonas; - yeast and mold fungi; - lactic acid microorganisms; - sulfite-reducing clostridia; - enterococci; - bacteria of the genus Salmonella; - Listeria monocytogenes; - Escherichia coli; - Staphylococcus aureus; - coagulase-positive staphylococci; - Yersinia enterocolitica; - bacteria of the genus Campylobacter; - Bacillus cereus
