The standard defines the requirements for the design, manufacture, installation, transportation, operation, safety and hygiene in the design and manufacture of dough proofing cabinets (hereinafter referred to as cabinets) used in the food industry, flour confectionery, and bread baking. The standard includes technical requirements for safety in the design, production, installation, regulation, operation, cleaning and maintenance of cabinets, adequate to international requirements and provided for in the operation manual. A significant part of the hazards included in the standard are mechanical hazards (cuts, squeezing, cutting, loss of stability), electrical, ergonomic, as well as the dangers that arise from the inhalation of flour dust and non-compliance with the requirements of sanitation and hygiene. Noise and vibration do not pose a significant hazard when using cabinets. This does not mean that the manufacturer of this type of equipment is free from the need to reduce the level of noise and vibration and to provide information about the values of these indicators.
Стандарт определяет требования, предъявляемые к конструкции, изготовлению, монтажу, транспортировке, эксплуатации, безопасности и гигиене при конструировании и производстве шкафов для расстойки теста (далее - шкафов), используемых в пищевой промышленности, производстве мучных кондитерских изделий, хлебопечении. Стандарт включает технические требования по безопасности при конструировании, производстве, установке, регулировании, эксплуатации, очистке и техническом обслуживании шкафов, адекватные международным требованиям и предусмотренные руководством по эксплуатации. Значительную часть опасностей, включенных в стандарт, составляют механические опасности (порезы, сдавливания, разрезания, потеря устойчивости), электрические, эргономические, а также опасности, которые возникают при вдыхании мучной пыли и несоблюдении требований санитарии и гигиены. Шум и вибрация не представляют собой значительной опасности при работе шкафов. Это не означает, что производитель данного вида оборудования избавлен от необходимости снижения уровня шума и вибрации и представления сведений о значениях названных показателей
