This standard applies to poultry meat, including boneless and shredded, as well as by-products and semi-finished products from poultry meat and establishes methods for organoleptic and physico-chemical studies (determination of the total acidity of semi-finished products, mass fraction of carbohydrates, starch and bread, volatile fat acids, acid and peroxide value of fat, qualitative determination of the freshness of poultry meat by protein breakdown products by reaction with Nessler’s reagent, qualitative test for added components containing carbohydrates s, qualitative test for peroxidase activity)
Настоящий стандарт распространяется на мясо птицы, в т. ч. обваленное и измельченное, а также субпродукты и полуфабрикаты из мяса птицы и устанавливает методы органолептических и физико-химических исследований (определение общей кислотности полуфабрикатов, массовой доли углеводов, крахмала и хлеба, количества летучих жирных кислот, кислотного и перекисного числа жира, качественное определение свежести мяса птицы по продуктам распада ��елков по реакции с реактивом Несслера, качественный тест на добавленные компоненты, содержащие углеводы, качественный тест на активность пероксидазы)
