Microbiology of foods and animal feed. General requirements and guide for microbiological research

This standard establishes general requirements and gives recommendations / options in three main areas: - implementation of the standards of the Technical Committee ISO / TC 34 / SC9 or 34 / SC 5 for the detection and enumeration of microorganisms, hereinafter referred to as the relevant "standards for a specific test method"; - Good laboratory practice for food laboratories for microbiology laboratories (the description of this standard does not include their description, there are special reference books for this); - guidelines for the accreditation of microbiological laboratories (this standard describes the technical requirements according to Annex B of ISO 17025 for the accreditation of microbiological laboratories by national authorities). The requirements of this standard abolish and replace the corresponding requirements of existing standards for a particular test method. Additional requirements for molecular biology research are given in ISO 22174. This standard applies to bacterial, yeast and mold research. The use of this standard in studies of parasites and viruses, subject to the addition of specific recommendations, is allowed. This standard does not apply to studies of toxins and other metabolic products (eg amines) of microorganisms. This standard is applied in the microbiology of food, animal feed, the environment of food production and the production of raw materials for food.

Настоящий стандарт устанавливает общие требования и дает рекомендации/варианты по трем основным направлениям: - внедрение стандартов Технического комитета ИСО/ТК 34/SC9 или 34/SC 5 по обнаружению и подсчету микроорганизмов, здесь и далее называемых соответствующими «стандартами на конкретный метод испытания»; - надлежащая лабораторная практика для микробиологических лабораторий, исследующих пищевые продукты (в задачи настоящего стандарта не входит их описание, для этого имеются специальные справочники); - руководство по аккредитации микробиологических лабораторий (в настоящем стандарте описываются технические требования согласно приложению В стандарта ИСО 17025 для аккредитации микробиологических лабораторий национальными органами). Требования настоящего стандарта отменяют и заменяют собой соответствующие требования существующих стандартов на конкретный метод испытания. Дополнительные требования по исследованиям в области молекулярной биологии приведены в ИСО 22174. Настоящий стандарт распространяется на исследования бактерий, дрожжей и плесеней. Допускается применение настоящего стандарта при исследованиях паразитов и вирусов при условии дополнения конкретными рекомендациями. Настоящий стандарт не распространяется на исследования токсинов и других продуктов метаболизма (например аминов) микроорганизмов. Настоящий стандарт применяется в микробиологии пищевых продуктов, кормов для животных, окружающей среды производства пищевых продуктов и производства сырья для пищевых продуктов
